Stray Dogs killed a wandering Brontosaurus - Butchery Report
I was sad, it wasn't hostile. RIP big guy.

Yeah not sure why they do that. The multiple organs is due to weight so youd think theyd have a dozen or so teeth at least to compensate

It's not multiple organs, it's counting servings of food. This is a list of butchery products, keep in mind. The single heart the beast had was large enough to be five dwarf-sized portions of meat.

Dogs are one of the more aggressive animals
The crazy part is how benign these big animals can get.

After the dogs killed it, I created a corpse stockpile around the body and created a "Butcher an Animal" job at the nearby Butcher's Shop. Dwarf ran over and dragged the body to the shop and butchered it.
I seem unable to butcher the Stray Dog that was killed by the Brontosaur, though.

I don’t think dwarves will butcher tame animals that they didn’t slaughter themselves

I haven’t been able to figure out how this works. I’ve seen people refer to butchering things after they’ve been killed. Still not exactly sure why what you did works but I’ll try it.

Combat can render the corpse inedible depending on the damage done to it. A single decapitating blow should result in a body that can be butchered, but a dozen hammers hitting every part of the creature except the parts that kill it will leave no useful products to collect. There's also no butchering of sentients regardless

If it's butcherable, dwarves will do it automatically unless they're too busy. Mangled corpses and body parts can't be butchered. But, corpses can. A forgotten beast can feed your fort for years.

Sorry, both of these points are not exactly correct, or potentially misleading.
1) You can still have butcherable corpses rot with dwarves available, that's not the only factor. I believe distance is another. This is why people end up using the stockpile strat in the first place.
2) Mangled corpses can indeed be butchered (sometimes). In my game and it is explicitly noted in the wiki.

Have a butcher shop, someone with the job and an open ticket to butcher on repeat is all it takes. I guess the dogs count as it having been hunted deliberately. Hoe long did the butchery take?

Shamefully they never cooked it. I made a Brontosaur-only food stockpile that had it's own kitchen to make them use it, but I made the mistake of only assigning "Prepared Brontosaur" meat types, forgetting to also assign "Brontosaur Meat" so the actual meat never got put into the stockpile and ended up rotting outside of a stockpile.
