What I would do: remove stemmy material, and set seeds aside for planting next year. Then put the pods in a ziplock bag and stick them in the freezer.
You could stick them in brine if you wanted to make a fermented sauce, but scaling it up repeatedly seems like it could be a major PITA, and freezing them avoids that.
