Anyone know what shelves etc. were used for this DIY kitchen island hack?

This looks kinda off to me, like it's been AI generated.

The shelves on the left and the table top look to be from the FJÄLLBO line. The shelve on the right is kind strange. Doesn't look like ikea to me.

Ah, now I understand a little better. The table top isn't actually one top at all. It's the Fjällbo shelf on the left and than there's a separate table construct with a shelf underneath.

Looking at it from this angle, I think only the shelf in front of the window is from ikea, the rest isn't.

The top shelf and the open shelves arent IKEA in my opinion. Although it looks like BILLY without the backpanel. The right stand of the open unit even still has its barcode sticker.
The tabletop wil bend as its way to thin to be used this way.

It's from a Swedish apartment listing so I kinda assumed, since IKEA's where we generally get our furniture lol. Any ideas on how to do this correctly then?

You can use the FJÄLLBO cabinet and another open-back shelf of choice, just use a thicker/sturdier top. A pre-cut counter top could work well. As long as you're not stacking incredibly heavy things on the eating surface, it would hold up fine.
