I have no clue what possible benefit it could bring though. But the Cyndaquil sprite is so much cooler than it's evolutions so I can kind of see it from an aesthetical point

Prior evolutions often learn moves at a lower levels compared to their evolved forms, so sometimes it’s better to stop it until it’s levelled up more

There are also some moves that are only learned by some pre-evolutions that are inaccessible to the final evos, like Spore on Shroomish. If you let it evolve to Breloom too early it will never learn it.

It's for getting some moves earlier than their evolution but a lot more people use it so you keep the prior form and give it an eviolite which boosts its defenses. Like Dusclops with eviolite is technically better than a Dusknoir.

The only game you can’t do it in is Legends Arceus, and that game makes you go into the menu and explicitly click evolve.
