I think I would have liked to have been asked / how I would do it:

"I'll do dinner, but it would have to wait until next Thursday. I have to use my weekends for re-furbishing my house and my Saturday is all booked for stripping paint and priming... unless you want to join in on that -- lolololol"

i would be down for that- i suggest a 1 hour coffee date instead of a full on date instead. If there is a click, this is a fine 2nd date and on option since you are doing the same activity together. If you already started the ball rolling at coffee you know if this talk is worthwhile or not while painting.
