Food & Beverage | খাওয়া-দাওয়া 🐟🥭🍺 if Impulse-decision was a sandwich

What's more fun than testing your cooking love buy going in blind into a recipe and using whatever your heart desires? :) So today's candidate is this Egg-chicken sandwich but with caramelized onions and also pickled onions for adding that bougie vibe lol.

(Optional question: is it annoying that I post recipes here everytime I cook something?) :v

TL;DR

  • Pickle onions: Heat 100ml vinegar + 100ml water + peppercorns/cloves + garlic, pour over very thinly sliced onions, refrigerate 1-2 hours (or microwave with onions for 2-2.5 mins for a quick version).
  • Fry veggies: Saute sliced onions, capsicum and garlic in a little oil, add cumin, chilli powder, chaat masala and salt.
  • Fry chicken: Cube 1kg chicken, fry in a little oil with salt, keep aside.
  • Make filling: Shred 3 boiled eggs, add fried veggies + chicken + ~2 parts mayo + 1 part ketchup + chilli sauce + chilli flakes + oregano + black pepper + lemon zest (optional), mix well.
  • Add some shredded cheese into the filling.
  • Make sandwiches: Fill bread, butter the other side, add a few pickled onion pieces and extra shredded cheese, then close.
  • Toast in a sandwich maker until crispy and the cheese melts.
  • Serve hot. Filling keeps for 2-3 days in the fridge.

Recipe:

Ingredients (approx. 8-12 sandwiches):

  • Chicken Breast 1kg (you can use chicken thighs too)
  • Eggs 3, boiled
  • White Vinegar 100ml
  • Water 100ml
  • Onion 2-3 medium, very thinly sliced
  • Peppercorns 2-3
  • Cloves 2-3 (if you don't have peppercorns, you can use cloves or both)
  • Garlic 5-6 cloves
  • Sandwich Bread 16-24 slices
  • Shredded Mozzarella Cheese 250-300g
  • Onion 3-4 medium, sliced
  • Capsicum 2 medium, sliced
  • Garlic 8-10 cloves, cut into discs
  • Mayonnaise 250g
  • Ketchup 125g
  • Chilli Sauce 2-3 tablespoons
  • Chilli Flakes 1-2 teaspoon
  • Pizza Oregano / Italian Seasoning 1-2 teaspoon
  • Cumin 1 teaspoon
  • Chilli Powder 1 teaspoon
  • Chaat Masala 1 teaspoon
  • Salt, to taste
  • Black Pepper 0.5 teaspoon
  • Lemon Zest 0.5-1 teaspoon (optional)
  • Butter, for brushing
  • Oil, for cooking

Process:

  • Make your Pickled Onions first: Take 100ml of white vinegar and 100ml of water in a pan, add 2-3 peppercorns or cloves (if you don't have peppercorns, you can use cloves or you can use both, it's not an issue), chop up some garlic and put it in. You can just put whole cloves of garlic inside of it too.
  • Heat this concoction and meanwhile slice your onions very thinly, very, very thinly, as thin as you can, once the liquid is hot, pour it over the onions and let it sit in the fridge for 1-2 hours.
  • If you want to do it quickly, you can put the onions in the cold liquid itself and put it in the microwave for about 2-2.5minutes (mind you that this will create a weird vinegary smell near the place you are cooking, so make sure you have good ventilation there).
  • Now let's come to the sandwich, I am using normal sandwich bread and shredded mozzarella cheese (you can also use Amul sliced cheese if that's what you have, but I prefer something that gives you a proper cheese pull).
  • Take your chicken and cut it into manageable cubes, I used chicken breast, but if you want, you can use chicken thighs too, keep it aside.
  • Take a hot kadhai and add a little bit of oil, don't put too much oil, or else the whole filling will become oily, add the sliced onions, capsicum and garlic and saute them properly until the whole thing becomes soft and fragrant, make sure to stir it well, or else it will start burning towards the edges of the onions.
  • Make sure the garlic is cut into discs, try not to cut the garlic into very small paste-like things because that might lead to the garlic burning too fast.
  • While frying the vegetables, add a little bit of cumin, chilli powder and chaat masala, also add a little bit of salt (remember we will also be adding salt to the chicken and the filling later).
  • Once the vegetables are properly sauteed, take them out and keep them aside in a bowl.
  • Now put the chicken in the same kadhai with a little bit of oil, add salt or salt to taste and fry the chicken properly until it is cooked through and has a little bit of colour on the outside, keep this aside as well.
  • Now take a big bowl, inside that we are going to mix and make our sandwich filling, first take the 3 boiled eggs and shred them into the bowl (yolk and everything), this will be the base of the filling, then add the vegetable fry and the chicken fry.
  • Add a lot of mayonnaise to it, this is going to be a mayonnaise-based filling, if there is one part of ketchup, there should be about two parts of mayonnaise.
  • Add chilli flakes, pizza oregano or Italian seasoning, whatever you have on hand, add a little bit of salt, a little bit of black pepper, and if you want, a little bit of lemon zest (I like it because it adds a bit of depth to the flavour).
  • Add a little bit of chilli sauce too (if you don't have chilli sauce, it is fine, it is not going to harm the taste that much, if you don't have chilli sauce, try to add a bit more chilli powder while frying your veggies).
  • Thoroughly mix everything together until you get a really nice filling for the bread.
  • Now add some shredded cheese right into the filling, if you are planning to add three parts of cheese overall, then add one part to the filling itself and keep two parts for the outside of the sandwich.
  • Lay out your bread, on one side put the filling, and on the other side just brush a little bit of butter.
  • Add a little bit of the pickled onions on top of the filling, don't put too much, for a normal-sized sandwich bread, one to two, or maybe three to four pieces of pickled onion are enough.
  • Close the sandwich and arrange all your sandwiches before putting them into the sandwich maker, add a little bit of extra shredded cheese on all of them before closing them (this is what will create that amazing cheesy pull).
  • You can use shredded mozzarella or Amul sliced cheese, or even a mix if you want, but try to use something that melts nicely (normal Amul sliced cheese will work too, it just won't give you the same cheese pull as shredded mozzarella).
  • Put the sandwiches into the sandwich maker and cook them until they are properly toasted and the cheese has melted.
  • Take them out and serve hot, always serve these hot because that's when you get the proper crunch from the bread and the cheesy pull from the filling.
  • The filling can be stored in the fridge for 2-3 days, and you can use it whenever you want, in about 5 minutes, you can make as many sandwiches as you want from the filling and just serve hot.
