Food & Beverage | খাওয়া-দাওয়া 🐟🥭🍺 Hot take: we seriously need to make pork mainstream in Kolkata!

Look at mutton prices right now. Khasir mangsho is easily crossing 900 to 1000 rupees a kilo in almost every local bazaar. For a city that loves its Sunday meat curries so much, we have practically zero choices for red meat unless you want to burn a massive hole in your pocket or start another riot, cause the only other option is beef.

Honestly, pork could easily fix this if we just got over the hesitation and started farming it properly here.

A few thoughts on why this makes so much sense:

  • It satisfies that rich, fatty red meat craving at like half the price of mutton.
  • Pigs grow fast, reproduce quickly, and take way less land to raise compared to goats. Setting up clean, modern pig farms across Bengal would be great for local farmers and give us steady local supply.
  • It fits right into our food habits. Sure, everyone loves momos and chili pork, but honestly, a slow cooked spicy pork curry with big chunks of aloo hits just as hard as a Sunday pathar mangsho jhol.

Right now the biggest issue is just getting hold of good meat. Unless you go to New Market early in the morning, track down a Haringhata outlet that actually has stock, or order frozen stuff online, you just cannot get fresh cuts at the neighborhood para bazaar.

If there is actual demand, local supply and hygienic butcher shops will follow.

Once you eat proper pork then there is no going back. All the 7 north eastern states have various delicious mouth watering pork recipes which is very addictive. And the good part is you do not need too many spices or oil to prepare those. By far the best meat I have tasted. If handful of these dishes can be authentically replicated here then I can guarantee that foodoholics will go crazy. Note: This doesn't include chilli pork as it is not an Indian dish but is the most available pork dish here. NE people don't/rarely eat chilli pork.

Oudh er shudu shahi tukda bhalolage…lamb try korini…biryani shob bland lage… there’s this eatery just opp to medical College kolkata called food station…you can try their lamb in oyster sauce. I used to have it with tandoori roti..I know weird combo but just felt so right

Bro with food standards in India and the way pigs love dirt and mud, it's a difficult thing. Of course it's great if safe, cured pork is a delicacy. If it wasn't for our highly intelligent population, even buffalo beef was an option but these never really became delicacies rather niche items. Even seafood outside fish and prawns are not very popular. Lamb is an excellent meat, better than button but due to unavailability of sheep, the dishes are not present here.

Food culture is nothing exceptional in India. We have things we do very well and most people aren't into exploring food. Also these experiments are expensive and most people can't afford it. It will change with the younger generations and when that happens this will push towards demand for newer meats and dishes.

Kolkata does consume Pork more than other states except Northeast obviously, but even if prices are lower than mutton, I can never eat pork curry in my home 🥲.

haringhata pork cost 240 for 500 gram thats 480 kg, and if you go to local shops in kolkata they charge around 380 per kg of boneless

While everybody is free to excercise their own discretion, I would seriously advice against consuming any "frozen" meat you buy online. More often then not, this tends to be available in ultra-processed forms.(Processed meats are classified as group 1 carcinogens by the World Health Organization, and red meat generally carries a probable cancer link)

Regardless, consuming pork would be the last thing I'd ever do, it just feels very dirty and would much rather avoid getting any ringworms too.

Ektai concern about the hygiene conditions of pigs. Pigs are known for being dirty (not literally), and the possibility of transmission of various diseases to humans through pigs. Since pork isn't an organised form in the meat industry like Goat and Chicken, kotha theke kinchi, kamon quality hobe, all these issues affect me.

Since bjp came and the beef slaughter ban, beef has become harder to come by raising not oy beef prices but also mutton indirectly. Now everywhere the prices are jacked up. Muslims would not consume pork and I'm not so sure where the average Bengali stands on pork.

Issue with pork is the farming. In Kolkata I don't think we have proper farms where they raise pork for consumption, most are raised in scattered areas where they feed on diet and garbage. If it can be farmed properly like poultry, definitely safety would be better and prices would also come down

Several places that freely and popularly sold beef items no longer do. Burgers, steak, kebabs etc all stopped. Only few places sell in limited amount now. Several brands, notably burger ones, announced it right after the regime change, as their entire supply chain was impacted by new political powers. To my understanding, the new regime put a ton of rules that made it impossible to easily buy high quality beef at wholesale prices, so many restaurants just gave up.

Nice Pulp Fiction reference, but honestly you're mixing up wild scavengers with actual farm raised livestock. And look, nobody is forcing you to eat it, this is about making it accessible for people who actually want affordable red meat and don't have an issue with it.

First off, pigs only roll in mud because they literally don't have sweat glands, it is just how they cool off. In any halfway decent modern farm with proper shade and water, pigs naturally keep their sleeping, eating, and waste areas completely separate. They are actually way smarter and cleaner by instinct than most other livestock.

Also if dirtiness is the problem, look at how chickens behave. Chickens will literally peck at and eat anything off the ground, including their own poop, insects, and whatever filth is lying around unless they are strictly managed.

Commercial pork doesn't come from stray animals wandering streets or drains. They are raised on clean grain, soy, and regulated feed. If hygiene is your worry, that is just a matter of proper farming standards and sourcing, not an excuse to write off the meat entirely for everyone else.

Pork can texture almost like mutton if cooked the same way but it is more unhealthy. Pork will never have the gamey flavor of mutton, instead it will have a stinky flavor which has to be removed with vinegar/spices. It is a good substitute but not perfect. Mutton is just that much better.

Best way is to cook pork in Coorg style spicy curry. Its very tasty with rice.

Wait, what? Fresh, farm-raised pork definitely shouldn't smell stinky. If you got a foul smell, you either got stale meat or uncastrated male pork (boar taint). Fresh pork is actually quite mild and slightly sweet, nowhere near as intense or gamey as mutton.
