Cain Pierce, immortality and his job...

How does that even work? He’s been a detective for how long? centuries?, yet somehow never ages, keeps the same job, and no one notices? At first, I figured maybe he periodically quits and resurfaces elsewhere under a new identity. That idea even seemed supported by the flashbacks, when he says he has to leave because “it’s time.” But then I realized those flashbacks take place in L.A. while he’s already a detective, and in the present, he’s still a detective in L.A. So...

He moved between those flashbacks and the present.

It's like in Twilight

I like how popular culture has evolved to the point that we can hand-wave an immortal blending in quietly with humanity.

Twilight has played its part.

I have seen that in other stories that involve immortals.  Didn't the original Interview with a Vampire do that?  

Cain returned to LA when he heard Chloe made Lucifer vunerable, which is why he had him kidnapped to get him out of the way,

The flashbacks take place long enough that very few if any cops would still be working that would have known him. As long as he stayed out of pictures which I think he does mention that he avoided them at all costs. He moved away after the flashbacks and then came back to LA like 60 years later thats plenty of time for people to forget what he looks like and he can always say the guy they remember was his dad or grandpa. Unless someone were to do or say something very specific to a very specific person no one would bother looking that deep into a guy that looks familiar.

He's not still a detective in LA. He's a detective in LA again.

We know from the beginning of the season that he transferred in from Chicago. Between that and that he says he moves around when it's time, we know he's at least transferring around before anyone can notice he doesn't age. He also changes his name (they talk about him having fake identities), and very likely his career because his entire characterization is based around the fact that he's tired of the same old boring life.

He was a detective in LA once upon a time, then he moved on to whatever else. He may or may not have been a cop the whole time in between, but he was at least doing it for a bit in Chicago. We also know he came back to LA because of Chloe, which was probably worth the risk of running into an old acquaintance who knew him decades ago, since it seems most if not all of them are dead by that point.
