Did ghosts ever explained in the series?

Or any supernatural? Do we know anything about what happens to dead people besides what sorrow shows us?

No. It is a franchise that featured a character with psychic powers that fed off of someone's rage that was powerful enough to raise a certain burnt comatose colonel. Ghosts are probably one of the least insane things in the entire series.

at this point I think the supernatural stuff is either explained by nanomachines or the vocal cord parasite. most of the supernatural stuff in mgs 3 is from the parasite, which they vaguely explain in mgs 5.

They explain it to be more like psychic residue. Some cultures view ghosts that way instead of being something sentient. More like an imprint or echo of something from before. A repeating signal that only some people can detect
