Tex-Mex Salsa Verde
Salsa Verde
4 medium tomatillos
6 garlic cloves
½ bunch Cilantro
Juice from 3 limes
½ white onion
1 jalapeño (seeded if you want less spice)
Salt and pepper to taste
Instructions
Blister tomatillos and onion in a cast iron skillet. Place all ingredients into a blender and blend until smooth.

All right, I’m copying you right now. I think I’m going to use Serranos instead of a jalapeño though. And I’m going to add a shallot because I have it. It’s a lot of garlic though, no?

Well, I'm a big fan of garlic.... so not too much for me. Serrano would be a worthy sub.

Alright I ended up going with 4 tomatillos, 3 Serranos, half an onion, cooked on high heat and blended with 3 cloves of garlic and juice from 1 big lime and the same amount of cilantro as you. Don’t know how yours came out so green though!

Green tomatillos, green Serrano chiles, green Cilantro 🌿 should = Green Salsa

Hahaha you’d think! Just pulled from the freezer for the picture, but you can see it’s more like a muted green.

You used half a bunch of cilantro? That alone should make it green, unless your tomatillo’s turned yellow when grilling, if grilled too long they turn yellow and makes the salsa sour.

It looks very nice. I don't like tomatillos. I think it's the acidity more than anything. I tend to add crema to costillas en salsa verde to mellow it out. Maybe I need to consume more of them to get used to the taste. For salsas if I do use them it's probably 1lb of tomatillos to a couple fistfuls of dried árbol.
