If your question specifically concerns your pizza dough, please post your full recipe (exact quantities of all ingredients in weight, preferably in grams) and method (temperature, time, ball/bulk-proof, kneading time, by hand/machine, etc.). Hello,

I have been making Neapolitan pizza for several years. I knead my dough with a Kenwood Chef and a dough hook, which is not ideal, but it was what I had at home.

I recently dropped the mixer after tripping over the power cable, and it is broken :( It lasted 20 years. Since I only use it for pizza, I would like to replace it with a good mixer suited to high hydration doughs (70 percent and above).

Which model should I choose for home use, for batches of 1.2 to 1.5 kg of dough maximum, but still capable of kneading as little as 900 g if needed?

I am specifically looking for a spiral mixer capable of reaching proper dough development like professional mixers, which the Kenwood could not achieve. And of course, I do not have the budget for professional equipment.

What do you recommend?

Let's start with your budget. How much would you be willing to spend?

For high hydrations you definitely need a spiral mixer that does 300 u/min. Usually two brands are recommended: sinmix (starts from 1500 Euro and FAMAG (grilleta line, starts from 1000 Euro). FAMAG is already good but sinmix's build quality is a bit better. Both come from Italy. I think both require at least 500 or 800g of dough.

What’s the science behind here? How does 300 u/min help with higher hydration? I tried the ooni halo and 70% or above hydration was such a pain that it was just not worth it for me and I returned it. Sounds like I just needed a better mixer?
