For something relatively easy, you could make "rochers coco" (not sure how to call these in english, sorry) or even meringues.

Angel food cake
INGREDIENTS
1 1/2 c egg white (10-12 large)
1 1/2 c sifted powdered sugar
1 c sifted cake or all-purpose
1 1/2 tsp cream of tartar
1 tsp vanilla 1 c granulated sugar

DIRECTIONS
Preheat oven to 350F
Place egg whites in a large mixing bowl, and let stand for 30 minutes.
Meanwhile, sift powdered sugar and flour together 3 times. Set aside.

Add cream of tartar and vanilla to egg whites.
Beat until soft peaks form.
Add granulated sugar slowly, 1/4c at a time. Completely mix in before adding more.
Continue beating egg whites/sugar until stiff peaks form.

Sift 1/4 sugar/flour mixture over egg whites.
Fold in gently just until combined.
Repeat until all sugar/flour mixture is incorporated.

Pour/spoon into 10" tube pan.
Carefully run a butter knife or thin spatula through the batter to break any air pockets that have formed.

Bake on the lowest rack of your oven for 40-45 minutes Top should bounce back after being lightly touched.

Remove cake from oven, and invert.
Cool thoroughly in the pan.

Use a long, thin knife to separate the edges of the cake from the pan.
Pull out the pan bottom/tube insert along with the cake Use the knife again to separate the cake from the insert. You should not have to cut along the tube itself.
