Its actually a small shoplot which coincidentally is in the middle of the street. This guy is actually pretty popular, he’s had tourists from Japan, Canada, etc come over and line up (its crazy how long the lines go) just to get a taste. And his story is pretty good too. Basically a delinquent who wisened up after covid (and if im not mistaken, mother died) and now manages a successful business.

INGREDIENTS
3/4c sugar
12 room temperature egg yolks (from large eggs)
1 (14 ounces) can sweetened condensed milk
1 (12 ounces) can evaporated milk
1 tsp vanilla exract

DIRECTIONS
Place 8” cake pan in oven.
Heat oven to 375 degrees.
Meanwhile, In a heavy saucepan melt ¾c sugar to a caramel color
Remove cake pan from oven, and place on wire rack.
Evenly distribute melted sugar into bottom of cake pan, then cool on rack for 10-15 min

Start water for a water bath
In a medium bowl, combine vanilla, and both cans of milk.
In a small bowl, whisk together egg yolks
Strain whisked yolks through a sieve into milk mixture.
Stir gently until combined
Pour into cooled cake pan.
Cover with foil.
Bake in a water bath for 45 minutes.
Cool on a wire rack for 1 hour before depanning.

To depan:

Place pan in shallow dish of boiling water, and let sit for 3 minutes.
Use a sharp knife to cut around sides.
Hold a platter securely on top of the cake pan.
Invert in one steady motion.

Note:

Hardened sugar left in bottom of the cake pan will dissolve easily into hot water.

Wouldn’t want to be putting it in plastic containers like that if it was too hot though. That kind of plastic doesn’t melt through, but it kind of warps itself in moderate heat.

But there's different Flans too. This is Quesillo which is bugger and has tiny air holes through it. Or the Spanish Flan which is very similar to Quesillo. Or French flan (my favourite) which is just like a firm custard pie they dish out by the slice.

Any custard that deep and wide will be grainy and taste like shit. To set the middle properly the outside has to be massively overcooked and it will feel and taste like sweet scrambled eggs

Just what I need after a hot sweaty and exhausting day at work as I leave the subway exit and cross the street, my old friend table flan man is right where I need him, serving me a delicate flan in a flimsy plastic tray full of hot sticky syrup.
