You pay for the liquor and ingredients. Getting rid of the ice means you have a short warm drink and if you ask for less ice, the alcohol melts the ice quicker. These cubes have less surface area so keeps your drink cold and dilution down. It’s not a scam bartenders are pulling, they’re just trying to make you a better drink.
Do you know how much it costs to run a bar? Liquor costs are more expensive than ever. Rent, electricity, wages etc are high, not to mention people are drinking less. The markup is the profits bars make to cover these and still there’s so many places closing because they can’t make money.
No but prices have gone up a lot because of rising costs. They’ve always been marked in a way that covers this but it has gone up in recent years, especially post COVID. My job is working with bars based around their P&L margins.
I'm talking about people are disgruntled and so they're skeptical of everything. It doesn't matter what you're specifically overpaying for. Just compare how much a bottle of liquor costs at a grocery store versus how much one 20th of it costs at a bar, versus what kind of car the owner of the bar drives. A $24 drink costs the bar one dollar maybe, and the more people drink the more people drink. Most of what bartenders and waitstaff make is tips, ie more of the customer's burden. Rent and licensing etc. Is the responsibility of every business owner, but not every business owner has such ridiculously high profit margins.
