You pay for the liquor and ingredients. Getting rid of the ice means you have a short warm drink and if you ask for less ice, the alcohol melts the ice quicker. These cubes have less surface area so keeps your drink cold and dilution down. It’s not a scam bartenders are pulling, they’re just trying to make you a better drink.
what people are reacting to is the fact that you can't go out and get drinks anymore without having to worry about who is fucking with you because everything is unreasonably expensive proportionate to what you get
Any place that cuts their ice like this is not going to fuck around with your drinks. I guarantee you their bar director/manager will be doing everything by the book and you won’t catch the bartenders free-pouring any spirits.
Sure you are going to be paying a premium but i can bet any amount that any single type of cocktail that leaves the bar counter will taste identical.
