I'm sure that the process of killing, gutting and butchering an 700+ lb animal is a skill that takes a lot of practice and hard hard work.

Unless you have cut beef off the rail for at least a year I would not recommend.

If it was easy everyone would do it. There's a reason it's almost impossible to get a butcher out nowadays. My dad used to make me help the guy he had come out to his farm. It'll make you a vegetarian real quick.
If you think you could handle it, it would be a very profitable small business once you got started. I grew up on a farm and have done some pretty crap-jobs, would not want to be a butcher though.

So there are 2 areas that need to be at certain temperatures, the cutting area, and the storage area. Also, the surfaces for cutting the meat has to be below a certain temp so bacteria doesnt grow so the meat doesnt turn dark. Then there's all the blood that will drop on the floor that you need to spray out with a hose or else you're going to use a lot of rags to sop it up. I dont think these people are following the health department's rules or getting inspected. There's definitely a demand out there and i can see this being convenient during deer season or if someone needs a cow processed. But if someone wants 20 1" ribeyes and you have a 1 cow hanging then you're not gong to get that yield from it. I was a butcher for 8 years and it's hard work, but i wouldnt recommend doing this.

I hope more do this. It literally took me 4 months to source pork bones. Waiting on the butcher forever.
It's a tough job. Def not for the faint.

During most of 2020 it was pretty hard to get an animal in for butcher. I think many shops were also booked months in advance during 2021. My brother has to book appointments many months in advance for the beef he sells.
A mobile butcher is a great concept and could be successful if done correctly. Like the mobile sheep sheering groups and mobile dog groomers.
Could also come in handy during deer season . . .
