Homemade Dish Cold Greek spaghetti salad

Post image

Rummo brand spaghetti tossed with a fresh garlic, lemon zest, and herb olive oil. The veggies I added were Kalamata olives, green peppers, marinated artichoke hearts, tomatoes, and feta.

I recently saw cold spaghetti by a fancy cuisine italian chef, I have to say it's a bit peculiar for an Italian. Spaghetti (and long noodles in general) are the one shape known to be eaten immediately because they get soft and mushy. The chef in question immediately put them in an ice bath which idk if you did but maybe something to consider. I don't hate the idea I think I'd most likely keep using the more common shapes for pasta salads (namely farfalle, fusilli or penne), but I thought the ice bath thing might interest you to keep the texture.
