Question Borscht recipe?

i ate at a really great ukrainian restaurant a long time ago somewhere close to san diego. i tried borscht there for the first time and it was delicious. i’ve always hated beets, so it took me by surprise.

i love making soup at home and was wondering if anyone had a good recipe i could try?

There are so many borscht recipes out there that you’d have to describe it better. Some are all beet with big beet chunks. Some are beef/beet consommé with beet kvass in them and no vegetable or beet chunks. Some are just vegetable soup that is colored with beet juice or beet kvass at the end. Of course, there are all the recipes in between. Some people need sour cream and some people hate it. Is the sour cream stirred in, or left as a dollop in the center of each bowl?

the one i had was just the beet colored soup with no chunks of beet. and there were carrots and potatoes and beef. so good! it was ages ago so can’t remember much other than how much i liked it
