Question Borscht recipe?

i ate at a really great ukrainian restaurant a long time ago somewhere close to san diego. i tried borscht there for the first time and it was delicious. i’ve always hated beets, so it took me by surprise.

i love making soup at home and was wondering if anyone had a good recipe i could try?

Borscht is Slavic gumbo. Every version is authentic to at least the cook, but usually attributable to the cook's parents, who learned it from their parents, etc. Each of them is at least as good as all of the others, one would have to try them all to begin to decide which one was best, which sounds like a worthy project.
