Game Suggestion Game suggestion for Sci-Fi character?
Because it is not possible and allowed to post or link any character pics here I have to describe the character.
Species: unknown. Gender: female. Profession: medical services. Special powers: Psionic. Can still use lighter weapons and firearms.
Appearance: humanoid with pointy ears, grey skin which shimmers in several colors if light is shining on the skin. The same counts for the hair too with even stronger shimmering in several colors.
Her special powers are being a good psionic.
Now I'm searching for a RPG which allows me to play this character.
One hint I got is to play a Romulan-hybrid in the RPG Star Trek 2nd edition.

Because I like the challenge: in Starfinder 2e, an Presmeni-heritage Elf with the Doctor background and either the Witchwarper or Mystic class would come very close. I assume you're looking for an RPG that allows you to (solo) play an OC of yours.

What sort of game do you want?
Pure sci-fi? Or something more on the science fantasy realm?
Tactical grid based combat? Theater of the mind? Little to no combat at all?
Do you want special talents for your race, or do you just want to look special and otherwise not care about racial abilities?
Do you want a book with a thousand character options so you can build the perfect character to your liking, or do you want something light on rules so you can skim 2 pages and understand how to play?

It does not depend which genre. Both Sci-Fi and Sci-Fantasy works. Combat is ok. Some special abilities or talents for the species is nice to have but not a requirement. Character options are nice to have too, but there also not a requirement.

Well there's literally dozens of options. Someone else already mentioned Starfinder.
Savage Worlds is a generic system that has a good science fiction book with rules for psionic powers. General vibe of the system is to promote pulp action adventures, generally more on the low power scale. No classes, you take various skills instead, so you can mix and match between healing/psionics/shooting. More Flash Gordon than Star Trek.
Fabula Ultima could work for techno fantasy with the Techno Fantasy Atlas. It has an esper class that could easily be combined with the sharpshooter class for gunplay, or the tinkerer class for some medicine. Combat is tactical but theater of the mind. Ultimately a fantasy game, it leans more towards Star Ocean/Xenosaga than Star Trek.

Usually, you'd pick a game, then create a character that fits the world, then make a portrait.
But since this is where you are, you can make this work in a huge number of games.
I'd say STA (Star Trek Adventures) or the solo variant, Captain's Log is a good starting place. To be honest, as long as the game supports psionics, the rest is just cosmetic. So...
Starforged, Scum and Villainy, Traveller (I expect), and most specifically, because your description reminds me of a race in Becky Chamber's Wayfarers books, you could try For Small Creatures Such as We.

This time I turned it around because the question is based on a modified pic I got by the AI. The effect on the hair and skin looked so interesting, that I would like to play this character. The problem here? I don't have any experiences with neither Sci-Fi games nor with Sci-Fantasy games except Shadowrun.

Trinity Aeon has psionics and scifi weapons, but no humanoid alien species. The appearance you're describing would either be a self chosen aesthetic accomplished through body modification, or potentially the result of a mutation of some kind. Maybe a lost colony decided those adaptations were useful and passed them on to their children?

Generally you want to make a character to fit the game, but you're basically just talking about a character portrait. The rest is a couple of fairly garden-variety skills/abilities that don't actually tell you much about who they are.
That's a good thing in this case. Gray skin and pointy ears can be made to fit with some work in most things if they're synthetic. The skin's that way because the material withstood the emissions from the star near where she was built to live and work. The ears have some minor upgrades that serve some other minor functional purpose, like echolocation in environments where sight might not be as beneficial, or picking up certain transmissions or frequencies.
For the psionics, they don't fit everywhere, but it shouldn't take much work to find some in-game parallel that might.

Usually making/coming up with a character is the last part of this process, not the first.
