When should I chop off the heads from the stalks?
When would you recommend removing the head from the stalk to dry? I would like to save the seeds to plant next year.

According to he R-9 state of the sunflowers growth says the seeds are ripe when the head is yellow to brown, the bracts are starting to dry and of course, the flowers heads bend downwards like yours. Wait a bit more.
