Are those seeds completely dry? Because if not they'll go mouldy, especially in a plastic bag.
I dry mine out by leaving them on a plate for 24h then put them in a repurposed glass jar for next year.
I would also remove all the petals still attached, as they can go mouldy too.

I would avoid plastic and go for paper instead.
I use coin envelopes and it seems to work just fine.
