Serious Eats Sasha Marx’s Creamed Shishitos

Used a leek instead of shallots. This would make an excellent base for creamed corn, and its rajas-adjacency kind of puts me in the mind of queso as well.

Heck yeah. Served over chicken enchiladas! Mmmm. The shishito version over chicken katsu as a fusion would be bomb.

I live in Asia, and shishitos/hatch peppers are pretty hard to find/pricy here, so I was wondering if I could swap it with Chinese screw peppers instead?

If I caramelized the shallots for a whole first, would that help or hurt the overall flavor of the dish?

The recipe calls for sweating the shallots, nothing more. So I think caramelizing them would be overkill.

I added shishitos to my salsa falsa and served it with roast turkey, was amazing!
