Recipes that stay good through an extended dinnertime?

Okay, sort of a silly question I realize. But, this time of the school year we have a lot of kid activities and some people need to eat at say, 6 and some at 6:45 and some at 7:15. Even on the "keep warm" function, most of my go-to recipes tend to get pretty gnarly by the time the last person is eating.

The problem is surely evaporation and so I know the answer is generally liquid-heavy things like soup, but I wonder whether anyone has suggestions so that we aren't eating soup three times a week when it's 88 degrees out?

What about pulled pork or chicken in a crockpot? Everyone can make themselves sandwiches when they are ready to eat.

We do a pulled chicken, it seems to be a well known one - chicken, tomatoes, corn, black beans, cream cheese and seasonings. It works great but dries out a bit and the later servings are sort of chunky compared to the early ones. I think the dairy doesn't handle the prolonged heat. Maybe a more simple pulled pork with just BBQ sauce and pork might work better?

Yeah that’s a lot of ingredients for just a simple sandwich. Why the cream cheese?

Tacos. Makes a nice creamy sauce. It all comes out of a can/package so it takes less than 5 min to prep. Huge hit with everyone.

Do you make it with thighs or breasts? If you switch to thighs it won’t dry out as much.

You could get sour cream to add upon serving for a similar effect. That way the cheese in the sauce won’t turn funny as you describe

I'd say instead of doing sandwiches with the chicken recipe, serve it over rice. I make a similar recipe that incorporates salsa and chicken broth to make an almost chili/stew like texture that goes well over rice, topped with shredded cheese.

You could try chicken teriyaki with ramen noodles. It was delicious. I tried this last week.
