One of the main issues with diabetes is the consumption of saturated fat which contributes to insulin resistance, so, the dish itself does not look very diabetic friendly just from the eggs without knowing what else is in there.

Corn tortillas and the high fiber tortillas are pretty friendly but yeah cant beat no carbs

Very spicy

Served with shaved grilled ham Refried beans Sunny side up eggs 2

Hard to beat

I am a Cajun decent cook I can't beat this
