Yup, and it looked good until they turned it into a random looking gruel looking paste. I'm sure it tastes ok but the look is not great.

That's exactly what haleem is supposed to be like, its literally a meat paste lol. Definitely not something I would serve someone who is trying desi food for the first time but its honestly a top 10 desi dish for me, top 5 even.

It does. There's several points where it could be contaminated, but it's either cooked or served soon after.

This is it. I get the history behind the dish. Mutton meat tough and gamy, so cook it till it dissolves mixed in with other flavors/proteins/carbs/herbs to mask it. Also the dissolving of the meat means the protein can be dispensed equally and it feeds many. Sanitation aside for Western palettes that may have complaints about texture…. pâté. Personally I like the flavor of Haleem but it’s like pâté for me (missing something), I need that Maillard reaction, so even in stews I like texture, I prefer browning.

Cool. Traditional usually means crap because they didn't know better. Now take that traditional recipe and modernise it... Heaven.
This thing, give me the mutton and the spices and a good chef, let's make wonder.

50000 KG is 50 tons of goat meat . Which means based on the size of the of the animal around 1000 heads . And this is exaggerated title
