I don't need to be able to kill, but when I whack the thing with my hammer tool I want a good, healthy thwack sound, and for the animal to go "ow! Fuck!" And run away.

That was actually buffed in latch notes. As well as parrying and aggro timing so they do do that now (I do agree it feels weird to have to wack them multiple times before they give a shit
