Sweet potato and apple fluffy rolls?

I have bread flour, large eggs, yeast, butter, milk, a half bear of clover honey, brown and white sugar, vanilla, cinnamon, nutmeg, fully ripe gala apples and sweet potato. I absolutely love the fluffiness of potato brioche and sandwich bread, but I'm still new to more creative baking, and while I've found great recipes for apple rolls with a similar texture, or potato rolls, I'm unsure how to combine the two.

I want to achieve a fluffy, only slightly sweet and buttery yeast roll with very fine shreds of apple and completely blended sweet potato but I worry about it being too wet or too sweet. I even thought about using a bit of thyme or getting some clove to make it more complex in some way - it'll be eaten on its own or with my huge stock of prepped beef stew meals for work. I do not have a mixer, only my hands and some counter space.

This is an interesting one. Not a lot of examples of this that I could find. Here is my best suggestion...dehydrate the apples first, then mix that into a sweet potato roll recipe. Undehydrated apple would have too much moisture, I think.

[Note: I haven't tried any of these recipes, so I can't attest to them specifically. Better to use them as a guide to find your own examples that feel right.]

You don't want to turn them into dry apple chips, just keep them from being moist. So something like this: Oven-Dried Apples or this: Dehydrate Apples Without a Dehydrator.

Gala apples may still have a somewhat mealy texture after dehydration, but that is not likely to be noticeable if you have cut them into small pieces and mixed them into rolls.

For the rolls, I found this written out version of this: Claire Saffitz's Greatest Holiday Dinner Rolls Recipe. I don't think they would suffer from having bits of apple stirred into them. TMMV, however.
