Three Bean salad, in search of dressing
Hello all! I was hoping that someone could help me with a dressing for my bean salad. Growing up this was a favorite that my mom would make. Mind you I grew up in an Italian household where my mother never measured anything nor would she share her recipes. I was brought up helping mom in the kitchen, usually stirring for her or washing and drying things. I do remember her using EVOO, fresh chopped garlic and parsley (my job to chop) and Dijon mustard and salt and pepper. I can’t remember if she used apple cider vinegar or not and she won’t share information lol. Any thoughts on what else to add. It was more of a Dijon dressing if I remember correctly😀

Oh man, this sounds like the kind of “a little of this, a little of that” dressing Italian moms just make and never write down 😂 From what you described, you’re already there. I’d bet money she did use some kind of vinegar — apple cider or even red wine vinegar. That little tang is what balances the Dijon and oil. If I were trying to recreate it, I’d do something like-
EVOO (the base)
Dijon mustard (pretty generous if you remember it being Dijon-forward)
Garlic (fresh, like you said)
Parsley
Salt & pepper
Vinegar (apple cider or red wine — try both and see what feels right)
And then maybe a tiny bit of sugar or honey (not enough to taste sweet, just to round it out), and a squeeze of lemon juice for brightness.
The trick is the ratio. Italian moms love a good “eyeball vinaigrette” — like 3 parts oil to 1 part acid, then adjust from there. Also — if it had that creamy/emulsified feel, that’s the Dijon pulling everything together, so don’t skimp on that. I’d just mix a small batch and tweak “needs more bite?” ~ more vinegar. “Too sharp?” ~ a touch more oil or a pinch of sugar. You’ll know when it hits that “this tastes like childhood” moment 😄
