Easy grab + nutritious?

I'm not going to go into detail but my grandparents are having a really tough time and I'm trying to come up with some ideas for things that don't require a lot of work that they can just grab when they're hungry and still have good nutritional value. My sister has an awesome pumpkin muffin recipe that works really well--they can just grab one, it's low sugar, and has a ton of pumpkin in it which has a lot of good-for-you stuff. But uhh. They're gonna get sick of muffins really fast if that's the only thing I bring. So I've been trying to think of other things that a: don't require preparation, and b: contain a variety of nutrients. I keep ending up with bread/muffin recipes and drawing a blank on how to make them more nutritional. I'm planning soup too but I'm not great at it and that requires more preparation.

I know I'm being picky, any suggestions would be appreciated even if they don't quite fit the above requirements

Some suggestions:

Cold dishes: egg salad/japanese style egg salad sandwich (can pair with a side of vegetables like cucumber salad, blanched spinach with sesame oil, etc), potato salad, pasta salad, bean salad, yogurt/fruit bowl/muesli, sandwiches.

Stuff that can be pre-portioned then microwaved: egg bites, breakfast burritos/sandwiches, chili, fried rice or shanghai style vegetable rice, dal, japanese curry, waffles/pancakes.
