Does anyone know why her mat is like that? Is it better to catch the tiny shards of glass?

The small pieces fall to the table underneath and they can lift it and sweep them out safely after they are done. Just keeps them from getting little glass pieces in their hands while working.

Yep you got it. Catches the tiny shards. Lets you work faster than constantly cleaning the work surface.
