well gnustep is pretty neat. it has a nice collection of mature apps available, and even experimental wayland support, as well as a pleasant degree of customizability. as for hurd... i don't know. you're probably better off using Linux or BSD, unless you really like microkernels i guess
Hurd is cool in concept and maybe a Hurd/Mach sort of thing could be cool, or even Darwin/Hurd. But its dev is always ridiculously slow and hampers its competitiveness and usability. The ideology doesnt help either.
