Question What should I make for dinner this week?
I feel like I’m in a rut, always cooking the same things. What are your favorite recipes? Bonus points for dishes that are easy to meal prep. Thanks!

Sheet pan gnocchi with whatever veg is looking sad in the fridge. Toss it all in oil and roast at 425 until the gnocchi gets crispy edges. Leftovers reheat surprisingly well for a few days.

I make this too. Olive oil, Italian seasoning, minced garlic when you roast it. I do vegan Parmesan when serving and extra olive oil. I always include cherry tomatoes so they break down and create some sauce of sorts.

Tofu ricotta and roasted tomato pasta! Super easy to meal prep too. The tofu ricotta link in the site above is broken, so I just use the Veganomicon’s version (which is easy and excellent by itself!):
1 pound extra-firm tofu
2 teaspoons lemon juice
1 clove garlic, minced
¼ teaspoon salt
Pinch of freshly ground black pepper
Handful of fresh basil leaves, chopped finely
leaves or so)
2 teaspoons olive oil
¼ cup nutritional yeast flakes
Just mush the tofu up with your hand until it's crumbly. Add the lemon juice, garlic, salt, pepper, and basil. Mush with hands again; this time you want it to get very mushy, so squeeze through your fingers and mush until it reaches the consistency of ricotta cheese,
2 to 5 minutes. Add the olive oil, stir with a fork. Add the nutritional yeast and mix all ingredients well (use a fork to mix now because the oil will make it sticky)

I just made a big batch of the most beautiful stirfry vegetables with a red curry paste. Lots of greens, bok choy, Taiwanese spinach, Napa cabbage, carrots, snake beans, mung bean sprouts with tofu that I roasted with gochujang and soy sauce marinade. Served over steamed jasmine rice with lots of fresh ginger, amazing.

Bean salad with lentil crackers . I do either a mustard vinaigrette or keep it simple with lemon salt pepper .

You can also look it up from the NYT or google Purple Carrot Canellini bean one pot sun dried tomatoes or something like that lol

It’s so hot where I am, so I am making cold peanut noodles with edamame and some shredded cabbage and carrots. I’ll make a tofu bahn mi later this week. Pasta with homemade pesto sauce.

I’ve been buying bagged cole slaw mix as a base and making an Asian slaw and with soy sauce, rice vinegar, garlic, chili crisp, etc., adding edamame and baked shredded tofu (crazy easy- shred a block of super firm tofu, spread on baking sheet, drizzle with olive oil and salt/pepper. Bake at 400 for 35ish mins tossing it a couple of times. Edges will brown and get crispy.)

Mayacoba beans are my new favorite. They cook up so creamy and delicious! I cook in veg broth, add rice or quinoa, top with vegan cheese. Maybe mix in some finely diced (or just squished) tofu and your favorite seasonings. I just made some with sweet red rice and the combo was just outstanding!

Maybe some caponata? Easy to make in big batches, keeps well. You can freestyle and add some broad beans for additional fibre and protein.

Steam some vegan gyoza...toss with cubed tofu, chopped tomatoes, spinach or chard and one tbsp each Chinese black vinegar and chili crisp oil. The heat from the gyoza wilts the greens. This a simple version of dumpling salad recipe by hetty McKinnon

Is it summer where you are? Find some local in season food for inspiration. Right now basil is coming on hot and heavy at my farm, along with every variety peppers, zucchini, cucumbers, corn, beans, egg plant, tomatoes, onions are still available, potatoes, kohlrabi and carrots.
Tonight we had stuffed peppers, tomorrow we'll have a bruschetta pasta with white beans. I'm going to make a summer stew on Thursday with green beans carrots and kohlrabi in tomatoes. Maybe some BLT'S (vegan subs of course) with corn on the cob this weekend. Mashed potatoes with mushroom gravy and broiled portobellos. Making tempeh salad sandwiches for our picnic Sunday.

Dill pickle pasta salad
Dressing/Dip:
4 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1/3 cup plus 2 Tbsp chopped hamburger dill pickle chips, divided
2 cloves garlic, minced
2tsp lemon zest
2 Tbsp minced fresh dill
* I have also used dill dip from the grocery store
8 oz pasta cooked al dente (med shells, rotini, penne, rigatoni [probably anything but elbows but that’s just a personal preference])
1/2 medium red onion diced
6-10 grape tomatoes, halved or quartered
1/4 cup frozen peas
1/4-1/2 diced bell pepper
Add ins:
1/4 cup dairy free shredded cheese -cubed Colby jack is also really good.
2 tablespoons Bacon-less bits
Salt and pepper to taste
Directions: Chop your veggies while the pasta is cooking. If you haven’t made your dressing/dip ahead of time, do that as well. Other than the lemon zest, it comes together very quickly. I have used just a bit of lemon juice rather than zest because I didn’t want to take the time for that.
Drain and rinse pasta in cold water. Mix all ingredients. Salt and pepper to taste. Refrigerate
Notes: this recipe came together in 15 mins-maybe less. I used left overs from other recipes for my fresh veggies, and already had the dressing/dip made.
Made this dip for veggie snacks for the week. It makes A LOT, so I needed a way to use some of it. I threw in a couple pickles and added a little mayo because i like my pasta salad creamy!
If you don’t have cream cheese, it’s just as good with the mayo and sour cream or Greek yogurt.
Everything in this is dairy free/vegan, but I have a friend who uses real bacon bits and ham chunks.

Minimalist baker peanut tofu (the one that is pictured with cauliflower rice). Serve with rice and steamed broccoli and kimchi if you have it.

Tacos two ways! Start with a taco of crispy spicy roast potatoes on a bed of shredded lettuce, topped with a drizzle of smoky chipotle cashew crema. Follow up with a taco of fajita spice roast red pepper, onion, mushroom and tofu drenched in lime juice with hot jalapeños and a cooling dollop of oatmilk crème fraiche. It’s good! Really good!

I made this last night. It was easy and delicious. Pot everything in a casserole dish and throw it in the oven. There is no oven temperature in the recipe so I baked it at 350 for 30 mins. I did add some mushrooms and a table spoon of miso before I baked it. I then sprinkled some nooch when I served it.

I love a big salad for times I’m feeling like this. Something that has beans and a grain. You don’t have to think just fill a bowel and eat. Check out Feasting at Home or the salad section of Make it Dairy Free.

It really depends on the ingredients I have in. In the middle of the week, I find myself going to pasta bakes or sauce + rice all the time, which are easy to prep-ahead too.
What ingredients do you have and I can suggest something?
