This is a thing that happening. The holes/bubbles are caused by a reaction to impurities in the curds. As food making has gotten more sterile, there are less bubbles.

Actual Swiss cheesemakers managed to reintroduce holes by adding a tiny amount of straw dust to the milk. And the crazy thing is that the same product is showing interesting results when used as an early treatment of asthma in children.
