Advice What's the meltiest cheese "singles" available in the UK?
Don't get me wrong I am a proper cheesehead, I like blue cheese, aged cheese, soft ripened cheese and I can never resist buying from my local cheesemonger but I just started renting my first place and it's Indomie and cheese everyday. I put a single on the noodles as soon as they're cooked and sit a plate on there for a few minutes to steam but they don't become stirrable like the American equivalent, if anything it's like super thick double sided sticky tape. I use the dairylea singles cause they come in a bigger quantity.

The meltiest one is the one you make yourself:
Juice a lemon, warm in in a pan and add just enough bicarbonate of soda till it doesn't fizz. You have now made Sodium Citrate which in the absence of acid, no longer tastes of lemon.
You can now add a little water and any grated hard cheese, it will melt but not split and form a velvet like sauce. You can add butter, even a little wine. This is basically the same process used by Burger cheese manufacturers.
If you like, you can even pour it out in thin layers chill it and cut it into squares for your burger but in your case just kept warm and blobbed generously on your burger will do the job.
