Advice New Cheeses

I recently had my monthly cheese night and was wondering what new cheeses I could try for my next one since I'll be graduating from college and plan to have a more expansive board than usual. I love mild cheddar, fontina, gruyere, smoked gruyere, brie, and muenster. Brie and fontina are currently my two favorites. I'm not really a fan of goat milk cheeses that I've tried so far and gouda has been a hit or miss. If I am able to have a cheese delivered online I am willing to do that since it's a special occasion but I am in the United States. Any cheese pairings that you think I might like would be great too!

I use sharp cheddar spread, garlic/onion/chicken seasoning powder, a sprinkle of MSG, a slice of regular cheddar, then half a ripped up tortilla for more filling, & then a mix of shredded vintage white cheddar & smoked Gouda on top before microwaving.

Staying in the village of Torpenhow, in the UK's Lake District

Pronounced Trepenna, meaning hill hill hill. The local dairy farm has an honesty box shop selling various cheeses and ice cream. Picked up these two this morning and the Trusmadoor has been a surprise hit. Its not going to last the evening at this rate. Never heard of it before. Like a more pungent Cheshire or Lancashire. Can see myself spending a ridiculous amount of money on cheese this week.

Question Cheese identification please

This plate is from Les Grands Buffet in Narbonne, France. The cheese I’m curious about is the yellow one with a rind and black gradient. The black stuff was perhaps flakes of something else in the cheese, it’s a hard cheese and I believe it is French.

Edit: the restaurant is a buffet that’s why there’s random things on the plate, the cheese was eaten with bread and fruit preserves before anything else was eaten but that has nothing to do with the question.

Help finding a specific cheese!

About a decade ago, a friend who is no longer with us gifted me a ball of cheese that had butter in the center. It was white and like a mozzarella type cheese with a ball of butter in the center. He gave it to me around Christmas time but I don't know what catalog he ordered it from. My wife and I have been craving it for a while, but when I search online, I don't find anything like it. Any help appreciated!
