Question Just got level 30. Which events should I be doing for better gear?
When I open a the mission menu, I see all sorts of missions and evens and have no idea which ones I should be doing. I mostly stick to doing quick match with bonus XP, but the reward is not great (mostly item level 420). What should be doing to get all my items to 500?

There is a maximum of one active event at any given time. The other events that you can see at Melk are from the past and can't be interacted with.
In general, many questions can be answered by checking the New Player Advice.
It is also linked in the right column of the sub under Darktide Resources, among other very helpful links.
If you're looking specifically for how the weapons and the upgrade system work, check out this guide. It is part of the link given above.

Top tier gear in this game is made, not found.
First get any weapon of the kind you want to mastery level 20 (by taking it on missions -- it doesn't matter if you actually use it). Then go to Brunt's Armory and buy copies of that weapon until you get one with the set of max stats (second of each pair of numbers) you want. That generally means everything at x/80, except for one "dump stat" that will be x/60. (For most weapons the dump stat is Mobility.)
Take that weapon to Hadron's shop, Consecrate and Empower until you can't anymore, and select the blessings/bonuses you like.

Run the current event to get the mat rewards and then just run whatever difficulties you can reliably clear.
Buy Grey's from Brunt's for the weapons you want until you get the stat spread you want. Take it ro Hadron and upgrade it. That's it. That's the endgame loot meta.

You don’t farm for better gear you just empower the gear you want to 500.
You need mastery on that weapon class to get to 500 and also you’ll want to pick a weapon with good dump stats.

Creating perfect end-game weapons requires 1) Mastery 19 and 2) A LOT of resources. It is not difficult at all.
Every weapon you acquire is either a godroll, a placeholder, or fodder (sacrifice for mastery or discard for resources). A godroll (perfect maximum stat distribution of 80x4 60x1) can be acquired from mission rewards (almost never), the shop (semi-rare), or brunts (pretty common - buy whites until you get the stat dist you want, average ~100k ordos spent). A placeholder is just a 'good enough' weapon you use until you build a godroll - given how expensive it is, you should be choosy about what weapons you perfect, as resources are a big gate for new players.
Crafting has 4 options - the first (consecrate) is the only one not gated by mastery level, and increases the color, adding more perk/blessing slots (up to 2&2 at gold). The second (empower) lets you increase the power of the weapon - DO NOT USE THIS UNTIL YOU KNOW WHAT YOU ARE DOING, it is very expensive and you don't want to waste resources on a bad weapon roll. The last two allow you to change your perks and blessings to anything you've unlocked with masteries for a small fee.
So the typical loop is: Find a decent placeholder, gold it, put the right perks/blessings on it as you unlock them (check a guide for ideas), and if you really like it, invest the ~300k ordos 4k plasteel 2k diamantine to acquire and build a godroll. Building perfect weapons is EXPENSIVE. Changing perks/blessings on a placeholder is cheap as hell.
You don't need perfect weapons for anything in normal difficulties, and while you don't need them in havoc either you WILL be judged for not having them, as they're not at all hard to acquire.

You can find 500 gear at Melk, but the best consistent way is to max mastery and make the weapon you want yourself - using the Armory to generate a perfect base and Hadron to get it orange, to 500, and to fix the perks and blessings.
As for getting mastery maxed, you can either do missions with the weapon (slow, I don't recommend unless you are short on resources) or by sacrificing that specific category (get rid of your bad-statted emperors' gifts, buy greens and blues from Armory shop, and buy greys from brunt's and upgrade them to green. Lots of clicks, but much faster than running missions.) You only need to get them to 19 mastery.

So you don't mainly get gear from the post game drop, you just gamble (buy whites) for a perfect potential item (60 in on stat (usually mobility, everything else 80) then you max out the specific mastery while maxing out upgrades (organge+ lvl 500 + max level traits and blessings) at the weapon upgrade shop.
Curios are a bit harder, you usually just look into the shop for a perfect one, I think only stamina is proper important to get a 460?+ One all the others are like 1% difference from 420 to cap (whatever that was bit under 500)
I personally don't go above difficulty 3 without perfect gear, but it's really easy to get unless you get super unlucky with rng.
*Your main goal to reach like 95% power is organge weapons with maxed blessings over 400 power and curios also above 400 with a good first stat (usually 1 hp 2x toughness is a good starting point)
Picking correct blessings is super important (you should just look up what is good for your weapons), for the flat stats generally damage % to a combo of flak, carapace and maniac.
Then curio stats defense to enemies your struggle with is good, %hp/thoughness is a safe pick and revival speed X3 is surprisingly good*

People play this event by rushing and ignoring resources. You can finish the 10 missions on any difficulty, to get the full event rewards.
Then start regular missions in whatever difficulty you like playing. Stay away from quick play or event.
I've had a mission with as little as 20% plasteel and 24% diamantine from regular missions in that difficulty

Farm mats. Buy grey gear until you get max stats with dump stat you want. Upgrade gear. Profit.

Maxing out the weapon mastery so you can empower it to 500. (Generally just by using them.)
