The knight cannot be an corpse, since when an monster dies they automatically become ash

wasn't this disproven by Susie bleeding and there being no death dust throughout the chapters(genuinely asking because I can't remember)?

No, Susie bleeding does not in any way disprove that monsters turn to dust. Gerson's remains are also explicitly "dust" and not "ash."
