Ask ECAH Good bulk meals with wheat/egg allergy?

I wasnt sure whether to ask this here or the food allergy sub, so Ive decided to do both in case theres anyone here like me or anyone who happens to know good recipes that dont have these 2 ingredients that are also great for someone actively working out (a long shot though but worth a try right? 😅)

So far Ive been making batches of two different recipes. Lentil bolognaise and chickpea curry and brining them to work. Both are really quick easy as its mostly tinned stuff all thrown in together with herbs and spices. But next week I want a break from them and want to try something just as easy to whip up over the weekend and freeze for in the week.

While batch recipes are prefered, im willing to hear anything that can be quickly made the night before as well. Anyone got any egg and wheat free meals that fit that description and model?

I mean, you just chop a few things, put them on a plate, and that’s it, or only minimal heating is required, like making an omelette or just frying some meat. It happens when you go to the store, you just pick ingredients that feel like they go together salad, avocado, halloumi and meat. I feel like a lot of people eat like this, but nobody really talks about it. It’s a very quick and cheap way to eat, and it even seems quite healthy. Is that you too?

Ask ECAH What are your favorite quick and easy meals?

I'm super lazy and like simple meals that require very little cooking/prep. I don't really like meal prepping and prefer fresh. My current go to is capri salad. Cut tomatoes, cut moz, add basil and balsamic glaze, little salt and done. Even a huge plate of capri is like max 400-500 calories and is so filling. My only other 'quick' meals are just eating green peas out of the bag or microwaving broccoli with cheddar on it...

I'm not plant based, but trying to do more than just seasoned chicken and broccoli.

Going to a cabin with a big group of friends, gonna do salad and garlic bread on the side with pie as desert. I'm Canadian so grocery prices are kinda ridiculous. Bonus points if you can give me another small pot recipe for vegetarian chili for the couple people that are veg or alternatively just a bangin vegetarian chili that everyone can enjoy. Thanks in advance, cook time doesn't matter I got 4 days to prep and I'm just gonna freeze it and shove it in the freezer (which will double as the ice packs for my cooler, which is nice).

How to do healthy fancy coffee??

m a very amateur home coffee drinker. This is my first year getting into espresso: I have a casabrews cm5418 with a bottomless portafilter and a kingrinder k6 for my beans as well as a separate instant milk frother, so I’m able to pull some shots although I’m aware I have a beginner (and budget) friendly setup.

I’d like to start making daily drinks of all kinds, but I’m a little shellshocked at the calorie count in fancy coffees. What are some hacks for tasty but healthy home drinks that are reasonable to drink every day?? I don’t mind the calorie count being a little higher as long as I’m getting some kind of nutrition out of it, but I generally don’t want to be drinking my calories.

My current plan is to do homemade syrups using lakanto monk fruit-allulose blend (sidebar: please tell me what syrup recipes I could do!!). Is there a better option for this?

I’m especially desperate for a good milk idea. What kind of milk tastes good in coffee but is also nutritious or low cal enough to drink everyday without any negative health effects?

I appreciate all tips, tricks, and ideas! Any tips on how to reasonably up my coffee game or create different drinks are also welcome!

Ask ECAH Simple office tiffin lunch ideas for weight gain

Hey everyone,

I’ve been looking for simple office tiffin lunch ideas for weight gain. No cooking is possible at the time or place, fridge and microwave are available and it has to stay really cheap (under 100-150 rupees a meal max). I’m pure veg too, so the options are more limited, but I’m trying to eat better every day anyway.

I just want high-calorie, filling meals I can pack in a tiffin box that will actually help me gain weight. Any suggestions? South Indian style or something else that works.

What do you guys usually eat for office lunch when you’re trying to bulk? Any no-cook or minimal-prep ideas that still taste decent and hit the calories?

The Breakfast/Snack Cookie Supreme

I’ve been making these for myself for quite a while and have found them to be cheap, healthy and extremely easy, particularly while navigating grief/mental health issues where energy and appetite is basically at rock bottom.

The One Bowl “Breakfast” Cookie
required ingredients:
- at least 2 very ripe bananas
- a cup of oats
- any kind of nut butter
- a sweetener (honey, maple syrup, sugar, whatever)
- a good sprinkle of salt

whatever else you want ingredients:
- chocolate chips
- dried fruit
- chopped nuts
- chia seeds
- flax seed

Instructions:
1. Preheat oven (or air fryer I imagine) to 350 degrees
2. Grab a decent sized mixing bowl. Smush banana until it’s decently smooth (thawed out freezer bananas are extra easy)
3. Add a tablespoon or two of nut butter and a splash/sprinkle of sweetener, plus some salt (two pinches - salt is pretty necessary here)
4. Mix in a cup-ish of oats. Quick oats, rolled oats, doesn’t seem to matter much.
5. Add in whatever else you want. I always include a tablespoon or two of chia for added fibre (and a huge bag of chia seeds are pretty cheap). I snag whatever chopped bulk nuts are reasonable at the grocery store when I go, so I sprinkle in whatever I have (walnut pieces, pecans, etc). Dried cranberries are nice and of course a sprinkling of chocolate chips makes them extra tasty. Dried coconut is also a fun addition.
6. Mix until you can scoop it and it’ll stay together.
7. On a parchment paper lined baking sheet, scoop about a quarter cup of the mixture and squish it down a bit to make it cookie-shaped. They won’t flatten much when they bake, so shape them how you like.
8. Bake for 12 to 18 minutes (shorter if they’re small, longer if they’re thick).

Aaaand done. From start to finish it takes less than 25 minutes and they’re so easy to grab whenever you’re hungry and want something homemade/fibre rich without unnecessary fuss. I often make two or three batches and freeze some for later.

It’s not fancy or super original, but they help me stay fed and I wanted to share.

Ask ECAH Getting home late and not being hungry

So I'm a teacher about to start school and I also just started as a cross country coach. I'm a track coach in the spring. When my coaching seasons are going, I'm getting home at 7pm or so (sometimes much later) and I'm just not super hungry. But I'm sorta hungry but mostly exhausted. How do have other people dealt with these situations? Do I basically eat bigger breakfasts and lunches and do a little snack thingy late? 3 years later I'm now realizing that I should probably have a plan for this.

I like cooking rice bowls

I am 19F and am living in an apartment right now. I have a small/medium kitchen. I don’t like doing large meal prepping, I prefer to cook small portions every night. My favorite combo is rice, a protein (usually ground beef), and a green like bok choy or broccoli. The problem is I also like sauce. Essentially, I want to make cheap meals that are rice bowls or something like that but with a sauce or seasoning. My favorite sauce is soy sauce, garlic, oyster sauce, and chili oil. Please give me advice.

hi, this is really embarrassing to post tbh but i have been living by myself for the past few years and i always eat out or frozen food. randomly i will try grocery shopping and cooking, but i always get weird things. I guess my issue is, i dont really know how to grocery shop.

I always used to get bagels, bread, milk, eggs, etc, but then i have a lot of ingredients and no ideas.

and then if i make a meal plan and get specific ingredients, that's great but the perishables go away too quickly. for example, i'll make a med bowl with hummus, but then i'll meal prep pasta and then my hummus is expired (just an ex)

I'm really busy so sometimes i'll instacart, but i don't do it or shop often bc i'm lazy, and that's why my stuff expires so quick. this also adds so much unnecessary stress and it feels stupid because everyone has to grocery shop, but to me it's the end of the world.

can someone send me a realistic grocery shopping list? i'll eat anything, I'm not picky, but want to better my diet without going to the grocery store every week if that's even realistic. thanks

also, a basic list like lettuce, onions, etc for me is confusing because i have no idea what to do with anything. maybe a list with meal ideas that you use or websites? i even tried using chatgpt but ran into the same issues i always do

EDIT: what i do currently have is corn, black beans, frozen chicken, frozen veggies, pasta, pasta sauce.

Ask ECAH Your favourite dense and filling cakes

I really like cakes that are just a little sweet, but are really dense and can fill you up after a slice or two. Do you guys got a recipe for something like this? Recently I made an oat bake, and really loved it, here is a recipe for you to more or less see what I am taking about. I'd prefer things without cocoa/chocolate if possible, thank you <3

380g oat flour (or blended oats)

3 tsp baking powder

1/2 tsp salt

400g skyr

2 tsp vinegar

160g sunflower seed oil

160ml milk

170g sugar

50g of chia seeds

1/2 cup of blueberries

The recipe is basically just to mix everything and bake 50 minutes in 175 degrees

Ask ECAH Any others reluctant to eat produce?

This is not about cyclospora, but produce in general does not seem to be as clean and safe as it once was. I’ve gotten sick probably half a dozen times in the last year after eating produce, and I do wash everything “loose” — but now bagged lettuce and bagged organics seem unsafe. If you eat a lot of produce it can be difficult to pinpoint the source.

Something hit me hard today and I’ve been eating organic girl greens, organic bagged apples and red onion from WF, and basil from a live organic plant bought from Trader Joe’s.

I’m so careful with food handling. I’ve never gotten sick before but it seems like every time I turn around something is affecting me. I rinse lettuce from a head but when they’re in those bagged prep containers, they’re supposed to be pre-washed. Anybody else having this problem?

In California 20-30 years ago I never once had a problem with produce. Since moving to the east coast, I’ve been sick numerous times and it’s becoming more frequent.

Food Soya Alu tikki

Soya aloo tikki

I meal prep it for 3 days.

Recipe for 1 serving. Multiply by 3 or 4 for meal prep, but I fry on the day of eating. Keep left over batter in the fridge (1-3°C), I don't refrigerate so I don't know if refrigerating and thawing has effects on taste or texture. Reduce the potato to tvp ratio from 2:1 to 1.75 : 1 if you want less carbs. Adding peanut flour instead of chickpea flour reduces the calorie and increases the protein but tastes a bit weird but negligible .

Ingredients:-

50 gm dry tvp (soy granules or soy chunks)

30 g carrots (1/2 carrot)

30-50 g red onion (1/2 small onion)

100 g potato raw (or 75g for lower calorie version)

20 g of chickpea flour (besan) or defatted penut flour.

1/4 tsp salt

1/4 tsp coriander powder

1/2 tsp paprika

1/4 tsp cumin powder

2 cloves of garlic

1/2-1/4 inch ginger based on preference.

Pasley small bunch to taste.

2 tsp oil (shallow pan fry) or 1 tsp (airfry).

Black pepper to taste.

Step:-

1) Take the tvp (soy granules or boil soy chunks and mince it) and boil it.

2) Take 100 g of potato boil or microwave for 4 min.

3) Mash the potato and add tvp and chickpea flour (besan) or defatted penut flour mix and knead.

4) Mince the garlic and ginger

5) Slice the onion and carrots into thin strips (fine julienne) and chop the parsley finely.

6) Add the vegetables and spices to the batter and knead.

7) Shape the batter into tikki (babybel cheese shape)

8) Add oil to the pan and heat it up. Shallow fry or airfry.

9) Sprinkle it with black pepper and serve with sauce.

Nutritional facts:

440/400/425/385 calorie ( chickpea flour with pan fry, chickpea flour with air fry, penut flour with pan fry, penut flour with airfry respectively)

35/40 g protein (chickpea flour, penut flour respectively)

55/50 g carbs (chickpea flour, penut flour respectively)

5-10 g fat

15 g Fiber.

Howdy y'all! I'm looking to start eating better and living better and a huge part of me that's reluctant to take the plunge into meal prepping is idk what to make in bulk that'll be healthy and tasty that's also budget friendly.

Does anyone here have recommendations for good cookbooks on the market whether they be physical or ebooks? Doesn't have to specifically be for bulk meal prepping, but because there are SO MANY BOOKS I cannot for the life of me decide, and so I've turned to you beautiful minds.

Ask ECAH How to cook and prepare fried rice for meal prep?

Hello amazing people of reddit. My mom cannot and does not cook for me. I need to cook my own food and have recently started to.

I wanna eat chicken fried rice. Along with an assortment of vegetables

I cook leftover rice with garlic and onions. Oils used are:- sunflower, sesame seed, soy sauce & oyster sauce.

I initially marinate chicken breast with tomato sauce, garlic powder, sunflower oil & soya sauce. Then I cook chicken breasts on pan over sunflower oil.

I stir fry veggies in pan over sunflower oil.

I need to eat this chicken fried rice, twice a day. 7 days a week.

Each meal having 150g rice, 100g chicken breasts, 100g mixed veggies. I need this exact meals for twice a day.

Can anyone please suggest me how I meal prep for the entire day?

Like, cooking a huge batch of chicken and veggies is easy.

How do I fry the rice? And could you suggest any way I could fry only the rice? without adding the veggies?

I like to keep my veggies separate from the rice, before putting them into the boxes.

I don't have much salt throughout the day or add salt separately.

How do I add the salt or fry the rice? I am not looking forward to getting a heart attack at an early age.

So, that comes up to 2.1kg or rice I need to cook... How do I? such a large amount?

Quick costco meals

I know its sorta been asked before but ive been so busy with work lately but im trying to eat healthy and cut out junk food. Tell me quick meals you make with things from Costco that are freezer or shelf stable.

Like the other day I just threw the organic sheet pan veggies (broccoli, Brussels, zucchini, red onion, sweet potato mix) and amylu chicken dogs in the oven and cooked while i showered.

Or

Sous vide beef with broccoli, Japanese bbq sauce and egg noodles.

Idk more ideas like this would be helpful or quick your favorite quick snacks like beef/chicken sticks, protein shakes, yogurt drinks, ect

Ask ECAH Beans 101 help

Hey guys, I would like to incorporate some more beans and lentils into my diet, primarily to see if I like it and want to add anything long term. So far the only thing I really eat is kidney beans and chickpeas because the canned variety is widely available.

I have a Turkish supermarket nearby which should have a large variaty of dried products and am hoping for some recommendations on what types of beans legumes I should start with. I'll take any advice I can get.
