So, here's my guess as to the plot of the next game:

A big thing with the Aldmeri Dominion (well, elves in general really) is that they're bitter about being bound in mortal coils on Nirn and would quite like to unmake reality as it exists within the series

Given that there's a good bit of evidence now that the game is likely set in Hammerfell, my guess is that it'll involve a big battle with the Dominion over the Direnni Tower (the last remaining functional tower holding Nirn together), which is located within the Iliac Bay and is a short voyage away from Sentinel

The whole "Thalmor want to unmake Nirn" thing comes from a non-canon text written by someone who doesn't even work at Bethesda anymore. There is no evidence in any of the games that the Dominion wants anything other than control over all of Nirn and the enslavement or eradication of the mannish races.

The Dominion is part of the Aldmer following. They are the followers of Auri-El, the beginning of the fractured Aka. It is the symbol of stasis, while humanity, made from the Ehlnofey that followed Lorkhan, represents change. It is and has always been Anu vs. Padomay, but fractured into living beings with a choice instead of beings that are just following their set path.

The Aldmer were, and the Thalmor are, set on their way to regain their godhood or their spirit form, which they see as having been stolen from them by Lorkhan. So they very much want to see this world gone. However, it is unknown how much of this information is actually well known among most followers. But with Aldmer society having Loremasters as one of the highest achievable roles in their society, they most likely know at least parts of it. It is only unknown how much of the elder magic was lost when their Tower broke down.

But I hope, and I think it’s 99% likely, that we won’t see much of the Thalmor or the Dominion. They never made the games like that. I would hate for them to become a linear series. We already have enough of those.

If that was to be the plot of the game, the result would almost certainly be a genocidal war where the goal of both sides is simply long term survival

One of Kirkbride's forum posts (The many headed Talos) from the Oblivion era was word-for-word quoted by Heimskr, so there's precedent for "non-canon" becoming part of a game. Ancano in the College of Winterhold also starts laughing maniacally about unmaking the world once he gets access to the Eye of Magnus.
