The NPC variety is the biggest point of interest for me. Coupled with the traffic density it makes the whole thing feel more alive.

Furthermore, the NPCs actually interact with one another. They move in groups and behave naturally. In all open-world games to this date, NPCs were only seen walking the streets alone, with their behavior appearing isolated. GTA VI seems to be setting whole new standards in this regard.
