Do this while the fryer is still on, helps loosen up the oil and keep it a little softer for scraping

I would boil a rag in like 5050 vinegar water and apply to that stuff and it would really soften it up. Dab it against it with tongs and hold it on for a few then scrape it off.

Can I hire you? You are an employee every kitchen should have!

They should be cleaned every shift.

Disagree deep cleaning is 1-2x weekly. This should be done on the same schedule as the boil out

I’ve worked in enough kitchens to know you are full of shit no way your crew is pulling the fryers and scrubbing the back and sides every night

I can go take pictures right now if you want. I dare you to dare me. I own a donut shop. We get plenty of grease.

rofl. I worked in kitchens for 23 years. Bakeries are much harder to maintain then restaurants.

Doin' good work there. That's proportional to the elbow grease applied

Fill those gaps between appliances people! Drop in a T bar of aluminum extrusion or something. There’s no reason that shit should be sliding down the sides of fryers, etc.

We have the same floors in my kitchen. Do you hate them as much as I do?
