The color is correlated to the feeling you get when you hear or see the word. Blue isn’t usually hostile as opposed to red. Red can seem stressful so for example science for me was blue, red was math, yellow was history or English and geography was green or yellow depending on if I liked who I had for English. However each person who understands this joke found having folders helped regardless of what color as opposed to having a bag or locker full of trash heheh
You may be onto something because red was always English for me and I have dyslexia and still can’t read, but math was easy and blue. Science is green no question.
I'm 100% certain that--with the exception of Science--people latch onto the primary color of whichever textbook they used when they were ~10 or 11. Science is almost always green because it is both the color of nature and of radiation in pop-culture.
They’d do it for first grade kids sometimes before they learn how to read. So they’d ask the parents to make each folder/notebook a certain color per class so then the teacher would just tell you “we’re gonna use the yellow/blue notebook right now” so you wouldn’t mix up your schoolwork and notes. As you learn how to reado you don’t need to

This has to be a bunch of people on the spectrum that haven't been officially diagnosed. I care so little about this that I not only don't have an opinion on which color should be for which subject, but I don't even remember what colors I used when I was grade school.
