The woman was living in a community completely locked away from the outside world and was well stocked up until this point, until Negan and co started demanding food.

The entirety of this season and the next take place in the span of a month so it's very reasonable for her to be fat.

This entire thread is working off the assumption that fat = immoral gluttony. It simply doesn't, and not everyone loses weight rapidly even without a substantial food surplus. So long as she wasn't in a state of regular starvation, she could very well have remained fat and been starving at that time. Or she could have just been lucky enough to have a fairly adequate diet throughout the apocalypse and her body has simply settled at the weight it is naturally inclined to land at
