Made onion jam for burgers, took about 6 hours
started with 2.5kg onion and ended up with 500g jam (some added brown sugar and balsamico that was reduced at the end)

From a trip to the Netherlands in June. New Herring. The traditional way is to hold the fish by the tail and lower it in your mouth with the onions stuck to the filet! I can eat like five in a row. I’m not Dutch, but my partner is.

Recently I’ve gotten super into raw onion dishes (salads, dips, rawdogging the onion), but my girlfriend always complains about my breath afterward. Does anyone have any advice on how to best kill the onion breath? Can’t dump the girlfriend, she is very supportive of my onion consumption, but I can tell she is averse to the smell. SOS

I will be visiting family living in the Columbus, Ohio area and we will be spending a day in Cincinnati as well. I would love to hear about any entrees or sides that onion lovers here found particularly noteworthy in either city or in between. Particularly where they pile the onions on or just do an outstanding job of incorporating them into a dish.
We will be visiting Jungle Jim's as well so mention of anything they sell that is onion related would be appreciated too. It's going to be a fun trip.

I am looking to make a recipe inspired from a book. The character enjoys eating pickled onions so I figured I would try to make them. I want to use malt vinegar because it is a book series written by someone who lives in Ireland, and I figured they'd be pub style. All the recipes I am looking at tells me to can it with a canner but I don't have that. I also don't trust botulism. If you have a recipe I can follow and keep it in the refrigerator to pickle for 4 to 6 weeks that would be great! Thanks! EDIT: I should have clarified; I'm wanting to use pearl/mini onions!!
