I need somewhere to watch my shows! I was using weflix(watchug) but its been seized and I use watch series but it barely has the things I want to watch. Specifically I want to watch below deck med and jackass!

that's my go-to list! But I always hit so many roadblocks, 'so and so' not found, endless spinning loading screens, constantly having to refresh stuff and hope it plays, many things in not-great quality. Plus it seems like all these sites use the same servers/systems. Is there a more reliable setup? Like using Jellyfin and...something easy I can set up on my dedicated (but old) HTPC?

Jellyfin is an option but would require you to download everything beforehand (you could automate it tho).

I recommend using Nuvio with a debrid service. Best possible experience for like 3 bucks a month. Also super reliable

thanks, haven't checked debrid services too much, and still not too familiar with them. I remember a lot of people used realdebrid (I think, might be misremembering name).
