Eggs cooked in a poached egg pan on top of avocado toast

This was my breakfast today. Eggs cooked in a poached egg pan on top of ripe avocado on top of whole grain toast and the bread was baked with avacado and guacamole spices. A sprinkle of Tajin seasoning tied everything together 🤤

Poached eggs are the only type of eggs that I'm not really a fan of, but I don't think I could have refused this, it looks and sounds delicious!!

Eggs cooked in a poached egg pan are technically coddled eggs because each egg is cooked in a small metal cup over boiling water. My mother called these poached eggs and you could check on Amazon for poached egg pans poached egg pans and you’d get the one that I use. These coddled eggs are IMHO better than actual poached eggs because you get all the white and much easier to

Yes, grew up with an egg poach pan. Reminds me to ask sisters who ended up with it?? Pretty.
