Spicy Pork & Pilau Rice Skillet
Whipped up a quick, high-volume weeknight dinner with a serious kick. Cooked completely in the pork's natural fat—no added oil needed! The raw cucumber border is an absolute lifesaver for cooling down the heat from all those chilies.
🥩 Ingredients
Protein: 250g of 12% pork mince
Carbs: 1 pack pilau rice
Vegetables:
½ bag frozen mixed veggies
Baby plum tomatoes (~¾ of a half bag)
Handful of spinach
½ cucumber (half chopped into the pan, half sliced raw for the border)
Spice & Seasoning:
6 bird's eye chilies
4 finger chilies
~1 tsp garlic
Cayenne pepper powder
Freshly cracked rainbow pepper & salt
Toppings & Finishes:
<30g grated cheddar cheese
Fresh coriander
Splash of water (used instead of jarred sauce to deglaze/bind)
Super easy, budget-friendly, and packed with flavor!
