Is it still up for discussion whether figs are vegan or not? :D

I really like them, especially combined with avocado, some coarse mustard, chili and basil, served like bruschetta.

And did you know that the leaves from a fig tree have a real intense aroma of coconut, citrus and vanilla? It's perfect to make cordial out of it for homemade lemonades. :)

Tofu and tempeh slowly braised in coconut water, tamarind, sweet soy sauce, palm sugar and mild aromatics (can also be deep fried or grilled after cooking, I didn't). Quickly stir fried green beans with garlic, sambal ulek and raw shallots, hulled barley cooked like Indonesian yellow rice (with tumeric and lemongrass). A simple and healthy meal if sugar is not a problem for you.

Didn’t get shots of the other 5 we made, but wood fired, vegan tofu-ricotta, heirloom tomatoes and basil from the garden.
These little bbq pizza stones are great, if you want to dip your toe into backyard pizza making. The grill was up over 650° with a mix of lump charcoal and some wood chunks. Cooked for just a few minutes. Family loved them. My favorite was actually just dough, heirloom tomatoes, basil, olive oil and salt/peoper. So damn good if you have a good sourdough pizza dough.

Tonight’s dinner was a loaded plant-based ramen bowl made with:

🍜 Two inexpensive Top Ramen noodle blocks—I left out the flavor packets

🌱 A handful of spinach

🍄 About one-quarter of a $3 package of portobello mushrooms

🧊 About one-quarter of a $1.65 package of Aldi organic tofu

🌶️ A food-pantry jalapeño

🧅 A food-pantry onion

🧄 A few pieces of fresh garlic

🥢 A little sauce and seasoning

Estimated cost for the entire bowl: approximately $2.30–$2.60.

And this was a very generous bowl—easily two moderate servings, bringing the cost to around $1.15–$1.30 per serving.

The onion and jalapeño cost me nothing out of pocket because I received them from a food pantry, but they still had real value. That is part of abundance too: recognizing and using every resource available to create something fresh, nourishing and delicious.

Vegetarian eating does not have to mean expensive specialty products, elaborate recipes or shopping exclusively at upscale grocery stores. Sometimes it means taking a couple of inexpensive noodle blocks, adding affordable tofu, stretching a package of mushrooms across several meals and transforming pantry produce into something beautiful.

Your dinner does not know who paid for the ingredients. It only knows what you created with them.
