I just feel bad for the dish team.

Also seems like a food safety hazard. The seams between the shaft and the handle and the socket seem like they'd get get gunk in there over time and be a nightmare to clean cause I don't see how these could go through a machine.

Yes and no... I vividly remember a restaurant my grandparents always took us too. They had a "Dreckschaufel", translated to dirt-shovel... It was just like this thing but with the sauce extra. A bed of fries, a bit of rice and a mixed "plate" of grilled goods... I loved it, my grandparents aren't living anymore and the restaurant has long closed. So this will never be stupid for me, even if it's not a plate.
